If you haven’t already, it’s time to throw the “diabetics can’t eat starchy foods” myth out of the window. As I mentioned in my previous rant, there is no such thing as a “special” diet for diabetics: they are allowed to consume anything and everything their heart desires. The key: portion control.
Now that I’ve gotten this myth out of the way, let’s get right into the real purpose of this post.
This video left me banging my head. I can’t believe that I’ve spent all those years peeling potatoes when I should have done this instead.
The three things that you need are: knife, potatoes (duh), pot and water. First, run your knife around the middle of the potatoes just enough to cut through the skin. Then, boil them until they are fully cooked. When they are cool enough to handle, simply pull the skin off. That’s it.
Goodbye, potato peelers (well, unless you are making French Fries).
